Semifreddo translates to “half cold” in Italian. It’s richer than sorbet but lighter than ice cream, with a silky, airy texture. This recipe uses only five main ingredients, and the method intentionally keeps the strawberry sauce partly folded through the semifreddo while reserving some to spoon over each serving.

  • Fresh strawberries: Choose ripe, fragrant berries for the best flavour. The quality of the strawberries determines the overall taste.
  • Heavy cream (double cream in the UK): Use full-fat heavy or double cream for a stable, silky texture. Low-fat cream is not recommended.
  • Lemon juice: A small amount of lemon brightens the sauce and balances sweetness — don’t omit it.
  • Sugar: Fine caster sugar works well, but regular granulated sugar is fine too. The sugar is split between stewing the strawberries and whipping the yolks.

Recipe tips

Keep the cream cold — chill the cream until you are ready to whip it so it reaches stiff peaks cleanly.

Whipping eggs and sugar — whisking egg yolks and sugar by hand can be slow. Gently heat the yolks over a double boiler to pasteurize and loosen them, then finish whipping with an electric whisk for speed and volume.

Cool the strawberry mixture — the strawberry sauce must be completely cold before folding with the cream. To speed this up, chill it in the freezer for 20–30 minutes, stirring occasionally.

Chop strawberries small — smaller pieces break down faster when cooked, producing a smoother, more cohesive sauce.

What if I forget to reserve some strawberry sauce?

If you mix all the sauce into the semifreddo, it will still be delicious. You can serve it as-is or make an extra batch of sauce for drizzling. Reserving a small amount of sauce to serve cold gives a nicer presentation, but it’s not essential.

Can I use frozen strawberries?

Yes — frozen strawberries can be used. Use the same weight and cook them from frozen. They will take slightly longer to break down, but the finished sauce works well for the semifreddo.

Ingredients

  • 1.5 lbs (675g) fresh strawberries
  • 3/4 cup (150g) sugar, divided (use 100g / 1/2 cup and 50g / 1/4 cup)
  • 2 cups (450g) heavy cream (double cream in the UK)
  • 3 large egg yolks
  • 1 tablespoon lemon juice

Instructions

  • Wash and finely chop the strawberries. Place them in a large saucepan with 1 tablespoon lemon juice and 1/2 cup (100g) sugar. Stir to combine.

  • Bring the mixture to a gentle boil, then reduce the heat and simmer until the strawberries break down and the sauce thickens, about 12–13 minutes. Remove from the heat and transfer to a bowl to cool. Reserve 1/3 cup of sauce and refrigerate it for serving.

  • Place 1/4 cup (50g) sugar and the egg yolks in a bowl set over a pot of simmering water (a double boiler). Whisk by hand until the mixture becomes pale and thick — about 5 minutes. For speed, remove from the heat and finish whipping with an electric whisk until light and ribbon-like.

  • Combine the cooled strawberry sauce (except the reserved portion) with the whipped egg yolks. Allow the mixture to cool for 10 minutes, then chill in the freezer for 20–30 minutes until completely cold.

  • Whip the cold heavy cream to stiff peaks, taking care not to overwhip. Fold one-third of the whipped cream into the chilled strawberry-egg mixture to lighten it, then fold in the remaining cream in two additions. If the mixture seems lumpy, use a hand whisk to gently smooth it out.

  • Line a loaf pan with plastic wrap, leaving enough overhang to cover the top. Pour the semifreddo mixture into the pan, smooth the surface, and cover with the wrap. Freeze for at least 5–6 hours until firm. Remove about 15 minutes before serving, slice, and drizzle with the reserved chilled strawberry sauce.
