  • ½ lb (225g) short pasta , (such as casarecce, fusilli, or orecchiette)
  • 14 oz (400g) cherry tomatoes, sweet and ripe, washed and thoroughly dried
  • 2 oz (50g) Parmigiano Reggiano, cut into large, irregular chunks (do not grate)
  • 1 clove fresh garlic, peeled
  • 1 large handful fresh basil, (approximately 1 cup, loosely packed)
  • 1 tablespoon extra virgin olive oil
  • Sea salt flakes, to taste

Instructions

  • Bring a large pot of water to a rolling boil. Add a generous amount of salt to the boiling water (it should taste like the sea). Once boiling vigorously, add your chosen short pasta and cook according to package directions until it is perfectly al dente.
  • While the pasta is cooking, prepare your no-cook sauce. Add the washed and dried cherry tomatoes, the chunks of Parmigiano Reggiano, the fresh basil leaves, and the peeled garlic clove to a food processor. Blitz the ingredients until they are well combined, creating a vibrant, saucy consistency. You’ll need to pause about halfway through and scrape down the sides of the food processor bowl to ensure everything is evenly processed.
