  • 10.5 oz (300g) short pasta (we used cavatappi, but fusilli or penne work great)
  • 11.5 oz (330g) raw shrimp (prawns), peeled and de-veined
  • 2 large zucchini (courgettes), firm and unblemished
  • 1 clove garlic, minced or finely chopped
  • 1 small handful fresh basil leaves, plus extra for garnish
  • 1 tablespoon (20g) blanched almonds
  • Zest of 1 fresh lemon
  • 1 teaspoon fresh lemon juice
  • Olive oil, extra virgin preferred (for cooking and dressing)
  • Salt and freshly ground black pepper, to taste

  1. First, prepare the shrimp: de-vein and rinse them thoroughly under cold water. Pat them completely dry with paper towels and set them aside.
  2. Bring a large pot of water to a rolling boil. Season it generously with salt. Add the short pasta and cook according to package directions until it is al dente. Drain the pasta well, then drizzle about 1 teaspoon of olive oil over it. Toss gently to coat and prevent sticking, then spread it out on a baking sheet or large plate to cool completely to room temperature.
