Harvest Roast Sandwich with Creamy Avocado & Chevre

The Ultimate Roasted Vegetable and Goat Cheese Sandwich with Creamy Avocado Mayo

There’s a special kind of joy that comes with biting into a perfectly crafted sandwich. And today, that joy takes the form of this absolute masterpiece: a roasted red pepper and tender aubergine piled high on soft, thick-sliced crusty bread. What truly elevates this creation is the generous spread of our incredibly delicious, garlicky lemony avocado mayo, crowned with slices of delightfully tangy goat cheese. Who doesn’t love cheese? My adoration for it runs deep – from the warm, oozing perfection of a baked Camembert to the rich, sharp bite of extra mature cheddar on crackers, or the creamy indulgence of Taleggio. And let’s not forget the bubbling, melted mozzarella atop a rich lasagna. For me, the stronger the flavor, the better!

Why This Roasted Vegetable Sandwich Will Become Your New Favorite

This isn’t just any vegetarian sandwich; it’s a symphony of flavors and textures designed to delight your taste buds. Imagine the smoky sweetness of roasted red peppers, the earthy tenderness of griddled aubergine, the creamy richness of homemade avocado mayo, and the sharp, bright notes of goat cheese, all embraced by hearty, crusty bread. The combination of fresh, vibrant ingredients and thoughtful preparation ensures every bite is an experience to savor. Plus, it’s a fantastic way to enjoy a substantial, plant-forward meal that’s packed with nutrients.

The Stars of the Show: Perfectly Roasted Vegetables

At the heart of any great roasted vegetable sandwich are, naturally, the vegetables themselves. We’re focusing on red pepper and aubergine (eggplant) for this recipe, chosen for their complementary flavors and textures once cooked. Roasting and griddling these vegetables brings out their natural sweetness and adds a depth of flavor that raw vegetables simply can’t achieve.

Red Pepper Perfection

Roasting red peppers transforms them, softening their flesh and intensifying their inherent sweetness. The slight charring on the edges adds a delightful smoky nuance that pairs wonderfully with the other components of the sandwich. When roasted properly, red peppers offer a succulent juiciness that enhances the overall moisture and flavor profile. You’ll find that the oven does most of the work, making this step incredibly simple yet impactful.

Aubergine’s Charred Charm

For the aubergine, I prefer to use a griddle pan. This technique gives the aubergine beautiful char marks and a tender, almost meaty texture, without becoming overly soft or oily. The griddle method works perfectly in tandem with the roasting red peppers, allowing you to prepare both vegetables simultaneously and efficiently. Brushing thin slices with olive oil before griddling ensures a lovely golden-brown finish and prevents sticking.

Tips for Roasting and Griddling Veggies

  • **Don’t overcrowd the pan:** Whether roasting or griddling, give your vegetables space. Overcrowding can steam them instead of charring, leading to a less desirable texture.
  • **Season generously:** A good drizzle of olive oil, salt, and black pepper is all you need to bring out the best in these vegetables.
  • **Experiment with variations:** While red pepper and aubergine are fantastic, feel free to add other roasted vegetables like zucchini, mushrooms, thinly sliced sweet potato, or even asparagus for different flavor profiles.

The Creamy Dream: Homemade Avocado Mayo

And what about this avocado mayo? It’s genuinely a game-changer. I could happily substitute it for store-bought mayonnaise any day – it tastes infinitely better and is significantly healthier. Avocado, for me, is an all-time favorite ingredient. I’m probably as addicted to avocados as I am to cheese! Sliced, crushed, blended – it’s incredible in every form.

Beyond Basic Mayonnaise

This avocado mayo isn’t just a spread; it’s a vibrant, fresh, and incredibly flavorful condiment that brings the entire sandwich together. Unlike traditional mayonnaise, which can sometimes feel heavy, this version is light, zesty, and packed with healthy fats. The combination of ripe avocado, fresh lemon juice, garlic, and a hint of basil creates a complex flavor profile that is both creamy and bright.

Health Benefits and Flavor Boost

Avocado is a powerhouse of nutrients, rich in monounsaturated fatty acids (the “good” fats), fiber, vitamins (K, C, B6, E), and potassium. Swapping regular mayo for this homemade avocado version significantly boosts the nutritional value of your sandwich, making it a healthier and more satisfying choice. The garlic adds a pungent kick, while lemon juice provides essential acidity that cuts through the richness of the avocado and cheese, balancing all the flavors beautifully.

Making Your Own Avocado Mayo

Creating this creamy avocado mayo is surprisingly simple and quick. All you need is a ripe avocado, fresh lemon juice, a clove of garlic, a handful of fresh basil, and a touch of sour cream for extra creaminess and tang. A hand blender or a small food processor attachment will make short work of blending these ingredients into a smooth, luscious spread. Remember to taste and adjust the seasoning – a little extra salt, pepper, or lemon juice can make all the difference.

The Tangy Twist: Goat Cheese & Alternatives

For this glorious sarnie, I opted for firm goat’s cheese. I absolutely love its distinct, tangy flavor and crumbly texture. The goat’s cheese I used is quite robust, just the way I like it, and it marries perfectly with the charred, roasted vegetables and the creamy avocado mayo.

Selecting Your Cheese

Goat’s cheese has a very distinct character, and I understand it’s not everyone’s cup of tea. My boyfriend’s mum, for example, would be happy never to see it again! There are many different varieties, some milder, some much stronger. If you’re new to goat’s cheese, start with a softer, fresher chèvre, which tends to be less intense. For this sandwich, a firm, crumbly goat cheese offers a fantastic textural contrast and a pronounced flavor that truly stands out.

Exploring Other Options

If goat’s cheese isn’t your preference, don’t despair! There are many delicious alternatives that would work beautifully in this roasted veggie sandwich:

  • **Soft Pecorino Rosso:** This is a wonderful suggestion, offering a slightly salty, nutty flavor with a firm yet yielding texture.
  • **Feta Cheese:** Crumbled feta would provide a similar salty tang and crumbly texture.
  • **Halloumi:** Sliced and pan-fried halloumi would add a delightful squeaky texture and salty notes.
  • **Fresh Mozzarella:** For a milder, creamier option, fresh mozzarella slices would be lovely.
  • **Smoked Provolone:** If you enjoy a smoky, sharp flavor, a few slices of smoked provolone could be a fantastic addition.
  • **Vegan Cheese:** For a completely plant-based option, choose a firm, flavorful vegan cheese that melts slightly or crumbles well.

Both goat’s cheese and Pecorino Rosso, or any of the suggested alternatives, will create a perfectly delicious and satisfying sandwich, so pick the one you like best!

The Foundation: Choosing the Right Bread

The bread forms the essential base of our sandwich, and its quality greatly impacts the final experience. Opt for thick slices of crusty bread – sourdough, ciabatta, or a good artisan whole grain loaf would be ideal. The crust provides a satisfying crunch, while the soft interior soaks up the flavors of the mayo and vegetables. Toasting the bread lightly on a griddle pan or under the grill adds an extra layer of texture and prevents it from becoming soggy.

Incredibly delicious roasted vegetable sandwich with creamy avocado mayo and goats cheese.

Ingredients

  • 1 large red pepper

  • 1 small aubergine (eggplant)

  • 4 slices of firm goat’s cheese (or Pecorino Rosso)

  • 4 slices thick crusty bread

  • 2-3 tbsp olive oil

For the Avocado Mayo

  • half Avocado, (very ripe)

  • half Lemon juice (freshly squeezed)

  • 1 tbsp Sour cream (optional, for extra creaminess)

  • 1/2 clove Garlic (minced, adjust to taste)

  • large handful Basil (fresh)

Instructions

  1. Preheat your oven to 180°C (350°F). Slice the red pepper into wide strips and arrange them in a single layer on a baking tray. Drizzle with 1 tablespoon of olive oil, ensuring each piece is lightly coated, then season generously with salt and pepper. Roast in the preheated oven for 10 minutes. Flip the pepper slices over and continue baking for another 3-5 minutes, or until they are soft and have slightly charred edges. Remove from the oven and let cool.
  2. While the red peppers are roasting, heat a griddle pan over a medium heat. Slice the aubergine into thin rounds or lengthwise strips, about 1/4 inch thick. Lightly brush each slice with the remaining olive oil. Place the aubergine slices on the hot griddle pan in batches, taking care not to overcrowd. Griddle each side for approximately 1-2 minutes, until they are cooked through, tender, and beautifully charred with visible griddle lines. Transfer to a plate and let cool.
  3. To prepare the avocado mayo, combine the ripe avocado, freshly squeezed lemon juice, minced garlic, a pinch of salt and pepper, and a small handful of fresh basil in a bowl. Using an immersion blender or the small bowl attachment of a food processor, blitz the mixture until it reaches a smooth and creamy consistency. Stir in the tablespoon of sour cream (if using) and mix until thoroughly combined. Taste the mayo and adjust seasoning or add more lemon juice if desired, ensuring a perfect balance of flavors.
  4. Lightly toast your thick-sliced bread. You can do this by brushing each side with a little olive oil and toasting it on the griddle pan, or by using a conventional toaster/grill. Once toasted to a golden crisp, thickly spread one side of a bread slice with the homemade avocado mayo. Layer a generous amount of roasted red pepper and griddled aubergine on top. Add a layer of the firm goat’s cheese (or your preferred cheese), and finally, nestle a few large fresh basil leaves over the cheese. Close with the second slice of bread and enjoy immediately!

Serving Suggestions and Variations

This roasted vegetable and goat cheese sandwich is a meal in itself, but it pairs wonderfully with a simple side salad dressed with a light vinaigrette, a cup of your favorite soup, or a handful of crispy potato chips. For a heartier meal, consider adding a side of quinoa or couscous salad.

Feeling creative? Here are a few variations to try:

  • **Add some spice:** A pinch of red pepper flakes in the avocado mayo or on the roasted vegetables will add a pleasant kick.
  • **Herb power:** Experiment with other fresh herbs like mint or parsley in the mayo, or layer them into the sandwich.
  • **Protein boost:** For non-vegetarians, grilled chicken, turkey, or even a fried egg would complement these flavors beautifully. For vegetarians, consider adding a layer of hummus or some grilled halloumi.
  • **Sweet & Savory:** A thin slice of fig jam or a balsamic glaze drizzle could add an intriguing sweet-savory note.
