- ⅓ cup dry Italian white wine , (80ml, e.g., Pinot Grigio; can omit if preferred)
- 5-6 Sage leaves, fresh
- 1-2 sprigs Rosemary, fresh
- 1 Bay leaf
- 3.5 cups high-quality white beans, (855g/30oz total undrained weight, preferably jarred cannellini)
- 2 and ¼ cups low-sodium chicken stock, (500ml)
- 2 tablespoons extra virgin olive oil
- Salt, to taste

1. Prep the Ingredients: Finely chop the carrot, celery, and onion; set aside in a bowl. Mince the garlic and keep it separate. Prepare your chicken stock. Season the chicken thighs generously on both sides with salt.

Brown the chicken skin-side down for 10 minutes, undisturbed, until deeply golden and crispy. Flip the chicken and brown for another 10 minutes on the other side. Remove the browned chicken to a plate and set aside.
