- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh sage, finely chopped

Instructions
Make the stuffing

Preheat the oven to 350°F (180°C).

Remove the sausage meat from their casings and put in a large bowl. Add all other ingredients for the stuffing (cubed pancetta, grated apple, minced garlic, chopped chestnuts, rosemary, sage, nutmeg, salt, and pepper) and mix together using your hands or a spoon until thoroughly combined. Prepare the turkey breast
