How to make a fun and refreshing Italian Rossini Cocktail. This cocktail is easy made with a good fresh strawberry puree and bubbly prosecco. It's the solid cocktail for brunches, parties and special occasions.
If you're looking for a simple yet good Prosecco cocktail but want to try something a little different from the usual peach bellini or mimosa then this Rossini Cocktail is for you!
We love a Rossini (also known as a Strawberry Bellini) because it's so fruity, sweet and refreshing yet so easy to make.
It's made with a simple strawberry puree (strawberries and sugar) that's strained to remove any seeds and get it extra smooth then it's mixed with gorgeous, bubbly Prosecco.
See the full recipe below plus we've put together some good food ideas that you can serve with your cocktail, enjoy!

Ingredient notes and substitutions
- Strawberries – fresh strawberries when they are in season will make this cocktail extra good. If you'd like to use frozen strawberries check out our Strawberry Sgroppino Cocktail (it's so good!)
- Sugar – regular white sugar (granulated or caster) we tend to use caster because it's finer and dissolves quicker.
- Prosecco – use your fave, right now we're loving Maschio Prosecco.
Recipe tips
- Puree to Prosecco ratio – We love to add a lot of strawberry puree but the consistency is totally up to you and your personal preference. We'd start with 2 tablespoons per glass and adjust to taste.
- Quantities – you can double/triple the quantities of puree to make as much as you need!
- Adding lemon or lime – when we first posted this recipe we added a squeeze of lime to it which is lovely. You can add a squeeze of lemon or lime juice to the puree to taste, it adds a little zing!
You can make the puree in advance and store it in the fridge 1-2 days ahead of time. Don't mix the puree with Prosecco until serving.
Is there a mocktail version?Yes, replace the Prosecco with an alcohol-free sparkling 'wine'. It's a great alternative for those that don't drink.

Nibbles to serve with your cocktail
We love serving little nibbles or bites of food with a cocktail. In Italy, it's called an 'aperitivo' and you'll almost always get a little something when you order a drink even if it's nuts, chips or marinated olives.
See some of our good finger foods below that would go perfectly with a Rossini cocktail.

Ingredients
Makes 4 cocktails
- 7 oz(200g) fresh strawberries
- 2 tablespoons white sugar
- Prosecco
Method
Cut the tops off the strawberries and chop them in half. Add the strawberries to a food processor or blender with the sugar and blitz until really smooth.
Pass the puréed strawberries through a fine sieve to remove as many seeds as you can.
Add 3 tablespoons of strawberry puree to the bottom of a flute glass and top up (carefully) with prosecco. Make sure to add the prosecco a little at a time, the acidity from the fruit will make the prosecco froth much more than normal, enjoy!
