Ingredients

for the sour cream pesto dip

  • 30 g basil leaves
  • 10 g pine nuts
  • 20 g Parmesan, freshly grated
  • 1 clove garlic, cut in half
  • 40 ml olive oil, extra virgin
  • 100 g sour cream
  • pinch salt and pepper, to season

for the Prosciutto dippers

  • 230 g puff pastry, pre-rolled rectangle
  • 1 tbsp (heaped) Dijon mustard
  • 1 tbsp (heaped) Parmesan, freshly grated
  • 100 g Prosciutto Crudo, good quality
  • 1 egg, beaten
  • pinch pepper, to season

Instructions

  1. Preheat the oven to 180°C (350°F). Place the pre-rolled rectangle of puff pastry on a lined baking tray and brush evenly with the Dijon mustard. Sprinkle generously with the Parmesan cheese, then arrange a layer of Prosciutto Crudo, ensuring the pastry is mostly covered. Gently press down on the prosciutto to help it adhere to the pastry.
  2. Using a sharp knife or pizza cutter, cut the pastry into 14 strips across its width. Then, take two strips and place them together, ensuring the prosciutto sides are facing each other, essentially creating 7 long prosciutto pastry “sandwiches.” At this point, if you wish to serve more smaller portions, each long dipper can be cut in half before twisting.
  3. Carefully twist each pastry “sandwich” into a curly straw shape. Arrange the twisted dippers back onto the lined baking sheet, leaving a little space between each. Brush each dipper with the beaten egg wash. Bake for 10-15 minutes, or until they are golden brown, puffed, and wonderfully crispy.
  4. While the dippers are baking, prepare your homemade pesto. In a bowl, combine the fresh basil, Parmesan, garlic, pine nuts, and extra virgin olive oil. Using an immersion (handheld) blender or food processor, blitz the ingredients until they form a completely smooth, vibrant green pesto. Season the pesto with salt and pepper to taste. Once seasoned, gently fold in the sour cream until it’s beautifully swirled or fully incorporated, then transfer the creamy pesto dip to a serving bowl.
  5. Once the Prosciutto Dippers are golden and crispy, remove them from the oven. Allow them to cool slightly on the baking sheet for a few minutes before transferring them to a serving platter.
