These festive White Chocolate and Pistachio Cantucci Biscuits are incredibly easy to make and serve as a perfect homemade foodie gift for your loved ones, especially during the Christmas season!
Ingredients
- 2 cups all-purpose flour, plus extra for dusting (250g)
- ¾ cup caster sugar (superfine sugar) (150g)
- 1 pinch fine salt
- 3 large eggs (2 whole for dough, 1 yolk for dough, 1 white reserved for brushing)
- 1 tablespoon runny honey
- 1 teaspoon pure vanilla extract
- ½ cup unsalted pistachios (70g), roughly chopped, plus extra for sprinkling on top
- ½ cup dried cranberries (70g)
- ½ cup high-quality white chocolate (100g), for drizzling
Instructions

Preheat your oven to 350°F (180°C). Line a large baking tray (approximately 11×17 inches, or use two smaller ones) with baking parchment.

In a large mixing bowl, thoroughly mix the flour, sugar, and salt together. Create a well in the center for the wet ingredients.

In a separate bowl, whisk together only 2 large eggs plus 1 egg yolk with the vanilla extract and honey. (Set aside the remaining egg white for brushing later).

Pour the prepared wet ingredients into the well in the flour mixture. Use a fork to gradually incorporate the wet into the dry ingredients until a rough dough begins to form.

Add the roughly chopped pistachios and cranberries to the dough. Use your hands to lightly knead the dough until these add-ins are evenly dispersed and the cookie dough has formed a cohesive ball.

Divide the dough in half. Shape each half into a flat log, roughly 2 cm (¾ inch) thick and 9 cm (3.5 inches) wide. If the dough is sticky, lightly dust your hands with flour or, preferably, wet your hands slightly to help with shaping. Place the logs on your prepared baking tray and brush the tops with the reserved egg white. Bake in the oven for approximately 20 minutes, or until golden and firm.

Remove the logs from the oven and immediately turn the oven temperature down to 265°F (130°C). Allow the logs to cool for 5-10 minutes (until cool enough to handle). Transfer them to a cutting board and, using a very sharp, non-serrated knife, cut them diagonally into individual biscotti, about 1 cm (approx. 0.4 inches) thick.

Arrange the sliced biscotti flat on the same baking tray. Return them to the oven and bake for a further 30 minutes, or until they are crisp and very lightly golden. (They will continue to crisp up even more as they cool).

Transfer the baked biscotti to a wire rack to cool completely. Meanwhile, melt the white chocolate in a heatproof bowl set over a gently simmering pot of water (double boiler method) or carefully in the microwave.

Once the biscotti are completely cool, drizzle one end of each cookie with the melted white chocolate. Immediately sprinkle a small amount of extra finely chopped pistachios over the wet chocolate. Lay them on a tray lined with parchment paper to allow the chocolate to set before serving.
Notes
- How to shape the biscotti – If the dough feels a little sticky, lightly wet your hands with water instead of adding excessive flour. This helps immensely with shaping without drying out the dough.
- Use a sharp knife for cutting – Always use a very sharp, non-serrated knife that is large enough to cut each cookie in a single, clean motion. This prevents crumbling.
- Cool the biscotti on a wire rack – This is crucial for allowing air circulation around the cookies, ensuring they crisp up perfectly as they cool.
