Instructions
How to make the filling
- First, prepare your homemade pasta dough according to our guide and let it rest. While the dough rests, proceed with the filling.
- Blitz the ricotta cheese and sun-dried tomatoes in a food processor until the mixture is smooth and creamy. Small, fine chunks of tomato are acceptable.
- Add the fresh parsley and lemon zest to the mixture. Pulse briefly until combined, then transfer to a bowl and set aside.
- Cook the raw lobster tails in boiling salted water for about 7-8 minutes, or until they turn bright red.
- Remove the lobster tails from the water and let them cool enough to handle, or plunge them into a bowl of cold water for quicker cooling. Once cool, cut them in half and carefully remove all the meat.
- Finely chop the cooked lobster meat. Add it to the bowl with the ricotta filling mixture and gently fold to combine. Season with salt and pepper to taste.
Fill and seal the ravioli
- Roll out the homemade pasta dough using a pasta machine to your desired thinness. Fill and seal the ravioli with approximately 1 teaspoon of the lobster filling per ravioli. How to make the sauce
- In a skillet or frying pan, heat the olive oil over medium heat. Add the finely chopped shallots and garlic and sauté until soft and translucent, being careful not to brown them.
- Add the sieved tomatoes (passata) to the skillet and bring to a gentle simmer. Cook for about 5 minutes, stirring occasionally.
- Pour in the vodka (if using), stir well, and continue to simmer the sauce for approximately 7-8 minutes. This allows the alcohol to cook out and the flavors to deepen. Season generously with salt and pepper.
- Stir in the heavy cream and the finely chopped fresh parsley. Simmer for another 1-2 minutes until the sauce is heated through and creamy. If the sauce thickens too much, you can thin it with some reserved pasta water when the ravioli are cooking.
- Bring a large pot of generously salted water to a rolling boil. Carefully add the prepared lobster ravioli and cook for about 3-4 minutes, or until they float and are al dente.
- Using a slotted spoon, gently transfer the cooked ravioli directly into the vodka cream sauce. Avoid draining them in a colander to prevent damage and to allow some pasta water to emulsify the sauce. Gently toss the ravioli in the sauce until they are thoroughly coated. Serve immediately, garnished with fresh parsley.
