  • 2 heaped tablespoons mayonnaise
  • 2 heaped tablespoons sour cream
  • 1 garlic clove
  • 1 tsp Dijon mustard
  • 1 squeeze lemon (about 1 teaspoon)

  1. Cut the romaine lettuce in half lengthwise and rinse it well under cold water. Gently pat it dry thoroughly with kitchen paper or a clean towel. Ensure it’s very dry to get a good char when grilling.
  2. Finely chop the capers, salted anchovies (if using), garlic clove, and baby gherkins. Transfer these finely minced ingredients to a medium bowl. Add the mayonnaise, sour cream, Dijon mustard, and a fresh squeeze of lemon juice. Mix vigorously with a spoon or whisk until all ingredients are well combined and the dressing is smooth.
