Grill the eggplant slices in batches, ensuring not to overcrowd the pan, until they are soft and have nice char marks on both sides (about 3-5 minutes per side). Set aside to cool slightly.
  4. To prepare the marinade, combine the finely chopped garlic, mint, and chili (with seeds removed if preferred) in a bowl. Add the 80ml of extra virgin olive oil, red wine vinegar, and dried oregano. Stir well to combine all ingredients.
