Here at [Blog Name/Our Kitchen], we believe a quick and easy pasta recipe shouldn’t sacrifice flavor or excitement. This creamy sun-dried tomato pasta embodies that philosophy entirely. It’s robust enough to satisfy serious cravings on a lazy weekend, yet speedy enough to be your ultimate weeknight dinner savior. Much like our beloved Pasta alla Montecarlo, the comforting Pasta alle Sette P, and the vibrant Orecchiette alla Positanese, this dish is a definite must-try that we hope will become a staple in your culinary repertoire.

The Magic of Sun-Dried Tomatoes and Stracchino

The heart of this exceptional pasta dish lies in its core ingredients: sun-dried tomatoes and stracchino cheese. Sun-dried tomatoes, often preserved in oil, offer a concentrated burst of sweet and tangy tomato flavor that fresh tomatoes can only dream of. When blended into a pesto, they create a rich, savory foundation with incredible depth. This umami powerhouse is what elevates our sauce from good to extraordinary.

Then there’s stracchino. This soft, creamy, and slightly tangy Italian cheese is a true revelation. Its texture is similar to a very smooth, mild cream cheese, but with a distinct, fresh dairy flavor that’s less salty than Parmesan and less sharp than mozzarella. When melted into the sauce, stracchino contributes an unparalleled creaminess and delicate tang that beautifully balances the intensity of the sun-dried tomatoes. If you can’t find stracchino, don’t worry! High-quality cream cheese is an excellent substitute, providing a similar luscious texture and mild flavor profile, ensuring your creamy sun-dried tomato pasta remains spectacular.

Visual Walk-Through: Step-by-Step Guide

Our detailed step-by-step photos below offer a clear visual guide to mastering this recipe. For the complete written instructions, helpful tips, and ingredient list, please refer to the comprehensive recipe card at the end of this article.

Preparing the Sun-Dried Tomato Pesto

The first step to our incredibly flavorful sauce is creating a vibrant sun-dried tomato pesto. In a food processor or with an immersion blender, combine the oil-packed sun-dried tomatoes, creamy stracchino cheese (or cream cheese), grated Parmigiano Reggiano, and a fresh garlic clove. Blend until you achieve a smooth, thick, and wonderfully aromatic paste. This foundational paste is where all the deep umami notes begin! (Refer to photos 1 and 2 in the image collage below for visual guidance).

Sautéing Cherry Tomatoes and Building the Sauce

Next, we introduce a burst of fresh sweetness. In a large pan, heat a touch of olive oil and gently sauté the halved cherry tomatoes. Cook them just until they begin to soften and slightly blister, releasing their natural juices – this usually takes only 1-2 minutes. Once tender, remove them from the pan and set aside; they’ll be used as a vibrant topping later. In the same pan, add your prepared sun-dried tomato pesto. The residual heat will help release its aromas. Crucially, add about ½ cup of the starchy pasta water to the pan with the pesto. Stir continuously, allowing the water to emulsify with the pesto, transforming it into a wonderfully smooth, creamy, and irresistible sauce. The starch in the pasta water helps bind the sauce beautifully, giving it that restaurant-quality consistency. (See photo 3 for sautéed tomatoes, and photos 4-6 for sauce emulsification).

Once your pasta is perfectly al dente, drain it (remembering to reserve extra pasta water!) and add it directly to the pan with your creamy sun-dried tomato sauce. Toss vigorously to ensure every strand of pasta is generously coated in the rich, vibrant sauce. If the sauce seems too thick, a splash more of the reserved pasta water will help loosen it to your desired consistency. Serve immediately in warm bowls, topped generously with the sautéed cherry tomatoes and a final sprinkle of freshly grated Parmigiano Reggiano. Key Ingredients for the Perfect Creamy Sauce

Crafting an unforgettable creamy sun-dried tomato pasta begins with selecting quality ingredients. Each component plays a vital role in achieving that rich, balanced, and utterly satisfying flavor profile:

  • Mafaldine Pasta (or your preferred shape): We love mafaldine for its beautiful ribbon-like shape that holds sauce perfectly, but any short or long pasta will work. Think spaghetti, fettuccine, penne, or rigatoni.
  • Sun-Dried Tomatoes in Oil: The cornerstone of our umami-rich sauce. Using tomatoes jarred in oil ensures they are plump, flavorful, and easy to blend. If you only have dried, rehydrate them first in hot water.
  • Stracchino Cheese: This soft, spreadable Italian cheese delivers unparalleled creaminess and a subtle tang. It’s lighter than some other cheeses and melts beautifully. Don’t worry if it’s hard to find; a good quality cream cheese is an excellent, readily available alternative that will still yield delicious results.
  • Fresh Garlic Clove: A single clove is all you need to infuse the pesto with a fragrant, aromatic kick that complements the tomatoes without overpowering them.
  • Cherry Tomatoes: Sautéed until just softened, these burst with fresh sweetness, providing a delightful textural contrast and a pop of brightness to the finished dish.
  • Parmigiano Reggiano: The king of Italian cheeses. A touch in the pesto and a generous sprinkle for serving adds a salty, nutty depth that brings all the flavors together.
  • High-Quality Olive Oil: Essential for sautéing and forming the base of many Italian dishes. Extra virgin is always recommended for its flavor.
  • Salt: Crucial for seasoning the pasta water and balancing the flavors of the sauce.

Variations and Substitutions for Your Sun-Dried Tomato Pasta

One of the best things about this creamy sun-dried tomato pasta is its incredible versatility. Feel free to get creative and adapt it to your taste or what you have on hand:

  • Stracchino Cheese Substitution: As mentioned, if authentic Italian stracchino is difficult to source in your area, a good-quality, full-fat cream cheese makes an excellent, readily available alternative. It will provide a similar creamy texture and a mild flavor that still allows the sun-dried tomatoes to shine.
  • Sun-Dried Tomatoes in Oil vs. Dried: For convenience and superior flavor, we highly recommend using sun-dried tomatoes jarred in oil. The oil adds moisture and richness. If you only have dried sun-dried tomatoes, ensure you rehydrate them first by soaking them in hot water for about 10-15 minutes until softened before blending.
  • Add Fresh Herbs: Elevate the freshness by stirring in finely chopped fresh basil or a sprinkle of fresh oregano at the very end, just before serving, or when you emulsify the sauce. The vibrant aroma of fresh herbs beautifully complements the rich tomato flavors.
  • Boost with Protein (Meat): For a heartier meal, consider adding cooked Italian sausage (sweet or spicy), crispy pancetta, or even crumbled bacon. Fry your chosen meat in the pan after sautéing the cherry tomatoes, ensuring it’s cooked through and slightly browned for extra flavor before proceeding with the sauce.
  • Add Shrimp or Chicken: Sautéed shrimp or grilled chicken pieces offer another delicious and easy way to incorporate lean protein. Cook the shrimp or chicken separately or in the same pan before making the sauce, then stir them in with the pasta at the end.
  • Introduce Some Heat: If you enjoy a little kick, add a pinch of dried chili flakes (peperoncino) to the pan when sautéing the cherry tomatoes, or finely chopped fresh red chili with the garlic when blending the pesto.
  • Incorporate More Vegetables: Sautéed spinach, mushrooms, or bell peppers would also be wonderful additions, adding more texture and nutritional value. Add them to the pan after the cherry tomatoes, cooking until tender-crisp.
  • Nutritional Yeast for a Cheesy Boost (Dairy-Free Option): While this recipe relies on stracchino, if you’re experimenting with dairy-free options for the stracchino substitution, a tablespoon or two of nutritional yeast can add a cheesy, umami depth.

Expert Tips and FAQs for Sun-Dried Tomato Pasta

Top Tips for a Perfect Creamy Sun-Dried Tomato Pasta

  • The Power of Pasta Water: This is arguably the most crucial tip for any creamy pasta sauce! The starchy pasta water isn’t just for boiling; it’s the magical ingredient that helps emulsify the sun-dried tomato paste into a beautifully smooth, glossy, and cohesive sauce. Always reserve at least 1 cup of pasta water before draining your pasta.
  • Choose Your Favorite Pasta: This incredibly versatile sauce pairs wonderfully with almost any pasta shape. While we love mafaldine, feel free to use long pasta like spaghetti, fettuccine, or linguine, or short pasta shapes such as penne, rigatoni, or orecchiette. Choose what you enjoy most or what you have on hand!
  • Cook Pasta Al Dente: For the best texture and to prevent soggy pasta in your final dish, cook your pasta just until al dente – meaning “to the tooth.” It should be firm but still have a slight bite. Remember it will continue to cook slightly when tossed in the hot sauce.
  • Quality Ingredients Matter: Especially for a simple recipe like this, the quality of your ingredients truly makes a difference. Opt for good quality sun-dried tomatoes (oil-packed are preferred), fresh garlic, and genuine Parmigiano Reggiano.
  • Taste and Adjust Seasoning: Always taste your sauce before adding the pasta and adjust the seasoning as needed. Sun-dried tomatoes and Parmigiano can be salty, so add salt gradually.

Frequently Asked Questions (FAQs)

Can I prepare this creamy sun-dried tomato pasta in advance?

While the pasta dish itself is best enjoyed freshly made, you can certainly prepare the sun-dried tomato pesto paste 2-3 days in advance. Store it in an airtight container in the refrigerator until you’re ready to cook. This significantly cuts down on prep time when you’re ready to make the full meal.

How should I reheat any leftover sun-dried tomato pasta?

Leftover pasta can be reheated gently in a pan on the stove over medium-low heat. You might need to add a splash of water or vegetable broth to help loosen the sauce and bring it back to a creamy consistency. Keep in mind that pasta tends to soften the longer it sits, so for the absolute best texture, it’s always recommended to eat this dish immediately after preparing it.

This creamy sun-dried tomato pasta is super quick and easy to make and bursting with flavour. Made with a simple sundried tomato pesto, sauteed cherry tomatoes and creamy Italian stracchino cheese. Ready in under 30 minutes!

Ingredients

  • 1 lb (450g) Mafaldine pasta, (or other pasta of choice)
  • 1 cup (150g) Sun-dried tomatoes, jarred in oil
  • ½ cup (110g) stracchino cheese , (can also use cream cheese)
  • 1 garlic clove
  • 1 cup (150g) Cherry tomatoes, cut in half
  • 2 tablespoons Parmigiano Reggiano, grated plus extra for serving
  • Salt
  • Olive oil

Instructions

  1. Cook the Pasta: Bring a large pot of water to a rolling boil. Season generously with salt (it should taste like the sea!). Add 1 lb (450g) Mafaldine pasta (or your chosen pasta shape) and cook according to package directions until perfectly al dente. Before draining, reserve at least 1 cup (250ml) of the starchy pasta water.
  2. Prepare the Sun-Dried Tomato Pesto: While the pasta cooks, combine 1 cup (150g) sun-dried tomatoes (jarred in oil), ½ cup (110g) stracchino cheese (or cream cheese), 2 tablespoons of grated Parmigiano Reggiano, and 1 garlic clove in a food processor or a tall container for an immersion blender. Blitz until you achieve a wonderfully smooth and thick paste. Set this flavorful pesto aside.
  3. Sauté Cherry Tomatoes & Emulsify Sauce: Heat about 1 tablespoon of olive oil in a large pan (big enough to hold the pasta later) over medium heat. Add 1 cup (150g) halved cherry tomatoes and gently sauté for 1-2 minutes until they just begin to soften and slightly blister. Remove the sautéed cherry tomatoes from the pan and set them aside for garnish. To the same pan, add your sun-dried tomato pesto paste. Pour in about ½ cup (125ml) of the reserved pasta water. Stir continuously, allowing the sauce to emulsify into a smooth, creamy, and luscious consistency. If it appears too thick, add another tablespoon or two of pasta water until it reaches your desired creaminess.
  4. Combine & Serve: Once the pasta is cooked and drained, add it directly to the pan with the sun-dried tomato sauce. Toss vigorously to ensure every piece of pasta is thoroughly coated. Cook for another minute, allowing the pasta to absorb some of the sauce. Taste and adjust seasoning if necessary. Serve immediately in individual bowls, generously topped with the reserved sautéed cherry tomatoes and an extra sprinkle of freshly grated Parmigiano Reggiano. Enjoy your quick and delicious Italian meal!

Notes

Storage and Leftovers: The sun-dried tomato pesto (before mixing with pasta) will keep wonderfully in an airtight container in the refrigerator for 2-3 days. Leftover cooked pasta with sauce can be stored in the fridge for 1-2 days. To reheat, gently warm in a pan on the stove over low heat, adding a splash of water or broth to restore its creaminess. For the best flavor and texture, it’s always recommended to consume this pasta dish fresh.
