Ingredients

  • 14 oz spaghetti, (400g) or pasta of choice
  • 1 pound zucchini (courgettes), about 2-3 medium (500g)
  • 1 cup Parmigiano Reggiano, (50g) freshly grated
  • ⅓ cup whole almonds, (50g), lightly toasted if desired
  • 3 sprigs fresh mint, (10g), leaves picked
  • 1 handful fresh parsley, (5g), roughly chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to season

Preparation Step

  • Bring a large pot of water to a boil and season it generously with salt. Grate the Parmigiano Reggiano and ensure your food processor is ready for use.

To Make Zucchini Pesto Pasta

  • Wash the zucchini thoroughly, then carefully place them whole (do not trim or cut them) into the boiling water. Boil for 8 minutes until tender. Using tongs, carefully transfer the zucchini to a cutting board, being sure NOT to drain the water from the pot.
  • Add the pasta to the same boiling water (add more salt if needed) and cook according to package directions until it is al dente.
  • Meanwhile, while the pasta cooks, cut the ends off the boiled zucchini and roughly chop them. Transfer the chopped zucchini to a food processor and blitz until it forms a loose, coarse paste.
  • Next, add the grated Parmigiano Reggiano, almonds, fresh mint, fresh parsley, extra virgin olive oil, and a pinch of salt to the food processor. Blitz again until a smooth, vibrant pesto is formed. Add approximately 2 tablespoons of the reserved pasta water while blending to achieve a creamy consistency.
  • Transfer the finished zucchini pesto to a large mixing bowl. Once the pasta is cooked, drain it, reserving a little extra pasta water. Add the warm pasta to the bowl with the pesto. Toss everything together vigorously until the pasta is completely coated. If needed, add a little more reserved pasta water, one tablespoon at a time, to reach your desired sauce consistency. Serve immediately.

  • Reserve pasta water: We usually only use about 2 tablespoons of reserved pasta water to loosen the zucchini pesto slightly, but you may need more when you toss it with the pasta, so it’s always best to reserve a little more than you need.
