Simple in its assembly yet stunning in its presentation and flavor, Paciugo stands out as the quintessential summer treat, though its charm is truly year-round.

Experience the Magic of Paciugo: A Classic Italian Dessert
If you’re seeking a dessert that effortlessly balances indulgence with ease of preparation, look no further. Paciugo is a show-stopping creation that promises to deliver an unforgettable taste experience. While it truly shines on a hot summer’s day, its delightful combination of flavors and textures makes it a perfect indulgence for any season. Imagine the sweet, tart notes of fresh berries mingling with the deep, creamy richness of Italian gelato, all crowned with a symphony of textures. That’s the essence of Paciugo.
The Sweet History of a Ligurian Delight
The story of Paciugo begins in the picturesque Ligurian town of Portofino, back in the 1940s. It was here, at the renowned Caffè Excelsior, that Lina Repetto, the café’s imaginative owner, first conceived this extraordinary dessert. Her creation quickly captured the hearts (and palates) of locals and visitors alike, cementing its status as an iconic Ligurian specialty. The name “Paciugo” itself, meaning ‘mess’ in the Ligurian dialect, perfectly encapsulates the joyous, piled-high extravagance of gelato, fresh cream, and fruit that makes up this magnificent sundae. It’s a glorious, delicious mess you won’t want to miss.
Fortunately, bringing the authentic taste of Portofino to your home kitchen is remarkably simple. While traditional Paciugo calls for Fior Di Latte, a delicate milk-based gelato often hard to find outside of Italy, a high-quality vanilla ice cream or gelato makes for a superb and readily available substitute. This adaptability ensures that everyone can enjoy the charm of this Ligurian masterpiece.
Crafting Your Perfect Paciugo: Essential Ingredients
The beauty of Paciugo lies in the quality and harmony of its components. Selecting excellent ingredients will elevate your homemade sundae from good to truly exceptional. Here’s a closer look at what you’ll need to create this delightful Italian frozen treat, along with some helpful tips for substitutions and selection:

- Amarena Cherries: These dark, sour-sweet cherries, preserved in syrup, are a hallmark of Italian desserts. We highly recommend using Fabbri Amarena cherries for their unparalleled flavor and elegant presentation in those iconic jars. If Amarena cherries are unavailable, Luxardo Maraschino cherries offer a wonderful alternative, providing a similar burst of fruity sweetness and a beautiful crimson hue. Be sure to include a generous drizzle of their rich syrup for an added layer of flavor.
- Mixed Fresh Berries: A vibrant mix of fresh berries adds both flavor complexity and textural contrast to the sundae. Our preference typically leans towards a combination of juicy cherries, plump blueberries, and sweet, sliced strawberries. However, the choice is yours! Feel free to use your favorite seasonal berries, such as raspberries or blackberries, to customize your Paciugo. The key is fresh, ripe fruit that provides a natural sweetness and a slight tartness to balance the richness of the gelato and cream.
- Gelato or Ice Cream: The traditional Paciugo calls for Fior Di Latte (a pure milk-based gelato) and classic chocolate gelato. Fior Di Latte offers a delicate, creamy base that truly allows the other flavors to shine. If Fior Di Latte is difficult to source, a premium-quality vanilla bean ice cream or gelato is an excellent substitute. When choosing your chocolate ice cream, opt for a brand with a deep, authentic cocoa flavor. While you can certainly experiment with other gelato flavors, we strongly suggest trying the vanilla (or Fior Di Latte) and chocolate combination first to experience the authentic essence of Paciugo.
- Amaretti Cookies/Biscuits: These delightful Italian almond biscuits provide a crucial crunchy element. It’s essential to select the crunchy variety of amaretti, not the softer, chewy kind. Their crisp texture and subtle almond flavor offer a wonderful contrast to the creamy gelato and soft fruit, adding a sophisticated touch to each spoonful.
- Heavy Cream (Double Cream): Freshly whipped heavy cream provides an airy, luxurious topping that perfectly complements the rich flavors below. Whip it to soft peaks for the ideal texture.
- Cocoa Powder: A final dusting of good quality unsweetened cocoa powder adds a hint of bitterness and depth, tying all the flavors together and adding an elegant finish to your Paciugo.

Step-by-Step Guide to Making Your Homemade Paciugo Sundae
Recreating the legendary Paciugo at home is surprisingly simple, taking mere minutes to assemble. The key is to have all your ingredients ready and chilled, ensuring a seamless and enjoyable preparation process. Here’s how to build your perfect Ligurian ice cream sundae:
Prep Time: 5 minutes | Total Time: 5 minutes | Servings: 1 sundae
Ingredients:
- 1 cup (100g) mixed fresh berries (blueberries, strawberries, cherries recommended)
- Amarena cherries, about 6 cherries plus a drizzle of syrup
- 1 scoop good quality vanilla or Fior Di Latte ice cream/gelato
- 1 scoop good quality chocolate ice cream/gelato
- Heavy cream (double cream), 2-3 tablespoons once whipped
- 1-2 crunchy amaretti cookies
- 1-2 pinches unsweetened cocoa powder
Instructions:
- Prepare the Berry Base: Begin by gently chopping your chosen fresh berries into bite-sized pieces. Place them artfully at the bottom of a wide, clear cocktail glass or a charming dessert bowl. Over the berries, carefully spoon 3-4 Amarena cherries, ensuring a luscious drizzle of their dark, sweet syrup permeates the fruit layer. This creates a flavorful foundation for your sundae.
- Add the Gelato Layers: Carefully place one generous scoop of vanilla ice cream (or Fior Di Latte gelato) directly on top of the berry mixture. Follow this with one scoop of rich chocolate ice cream or gelato. Feel free to add an extra scoop of each if you desire a more substantial sundae; this recipe is easily adaptable to your preferred portion size.
- Crown with Whipped Cream and Garnishes: Now for the grand finale! Add a luxurious, large dollop of freshly whipped heavy cream over the gelato. Garnish this creamy cloud with an additional 1-2 Amarena cherries, allowing a small amount of their glistening syrup to cascade down the sides. Take your crunchy amaretti cookies and gently crumble them over the top of the sundae, adding a wonderful textural contrast. Finish with a light dusting of 1-2 pinches of unsweetened cocoa powder, giving it a sophisticated and inviting aroma.
Notes for the Perfect Paciugo:
- Always prioritize good quality gelato or ice cream. The better the base, the more exquisite your sundae will be.
- For the most authentic flavor, seek out Fabbri Amarena cherries or high-quality Luxardo Maraschino cherries. Their distinct taste truly makes a difference.

Serving Suggestions & Creative Variations
Paciugo is designed to be enjoyed immediately after assembly, allowing you to savor the contrasting temperatures and textures at their peak. Serve it in a beautiful glass to showcase its vibrant layers. While delicious on its own, here are some ideas to enhance your Paciugo experience:
- Pair with Coffee: A small, strong espresso or a rich cappuccino makes an excellent accompaniment, offering a bitter contrast that beautifully cuts through the sundae’s sweetness.
- Add a Liqueur Drizzle: For an adult twist, a tiny drizzle of Amaretto (to complement the amaretti cookies) or a cherry liqueur can add an extra layer of complexity.
- Nutty Crunch: While amaretti provide crunch, a sprinkle of toasted, chopped hazelnuts or pistachios could introduce another dimension of flavor and texture.
- Citrus Zest: A very fine grating of orange or lemon zest over the whipped cream could add a bright, aromatic lift to the dessert.
- Seasonal Fruit Exploration: Don’t limit yourself to the berries mentioned. In autumn, consider figs or roasted pears with a hint of cinnamon. In spring, perhaps delicate white peaches.
