  • 2 zucchini/courgettes
  • 8-10 large slices of prosciutto crudo
  • 8.8 oz (250g) raw spinach
  • 7 oz (200g) ricotta
  • 1 tbsp parmesan cheese, grated
  • 1 small white onion
  • 1/2 tsp nutmeg, finely grated
  • 1/2 cup (100ml) red wine
  • 2 garlic cloves (1 chopped, 1 whole for sauce)
  • 2 tbsp olive oil
  • Salt and pepper, to season

Instructions

  1. Thinly slice the zucchini lengthwise. Rub with a little olive oil, then grill on a hot griddle pan until soft and slightly charred on each side. Set aside to cool.
  2. Finely chop the onion and sauté in a pan with a little olive oil until soft and translucent. Add the spinach and 1 chopped garlic clove, and cook until the spinach has wilted. Set aside to cool.
  3. Once the spinach mixture has cooled, roughly chop it. Transfer to a bowl and mix with the ricotta, Parmesan, nutmeg, and a pinch of salt and pepper until well combined.
  4. Lay the thinly sliced chicken breasts on a clean work surface. If needed, pound chicken to 1/4 inch thickness by placing it between baking parchment and gently beating with a rolling pin.
