From Venetian Dreams to French Comfort: A Culinary Journey
Happy Hump Day, everyone! I’ve recently returned from an enchanting escape to Venice, and while the memories are absolutely magical, I’m currently battling a serious case of the holiday blues – and a significantly lighter wallet! Venice, without a doubt, exceeded every expectation. Stepping out of the train station felt like entering a scene from a fantastical film, a moment that filled me with pure exhilaration. The iconic gondolas glided gracefully through the canals, their gondoliers serenading passengers with charming renditions of ‘That’s Amore’ – a delightfully cheesy touch I adored! With blue skies overhead and the sun shining brightly, our private water taxi awaited, whisking us away to our accommodation. It was everything I had ever dreamed of, a truly unforgettable start to our Italian adventure.

A Gastronomic Highlight: Osteria Enoteca Ai Artisti
While Venice offered a plethora of delectable dining experiences, one particular highlight stands out above the rest: a charming little gem called Osteria Enoteca Ai Artisti. This restaurant enveloped us in a truly romantic ambiance, as we savored our meal at a small, candlelit table for two, set outdoors. The food served there was, without exaggeration, some of the most delicious we’ve ever tasted.
My culinary journey began with a sublime pumpkin cream starter, delicately flavored with ginger and capers, crowned with perfectly cooked squid and shavings of fish roe. Each spoonful was a revelation, a dish so exquisite I wished it would never end. Nathan’s choice, tagliatelle with succulent spider crab and wild herbs, offered a sweet and utterly divine experience – or so I gathered from the precious small mouthful he allowed me to try!
For our second course, I enjoyed a perfectly seared tuna steak, complemented by sweet balsamic baby onions and an incredibly addictive ‘Nduja mayonnaise. For those unfamiliar, ‘Nduja is a spicy, spreadable Calabrian sausage that is an absolute must-try – seriously, check out my other post on it if you haven’t! Nathan’s main was a flawlessly cooked seabass, accompanied by a vibrant tomato and ginger sauce and a unique curry pesto. He would have undoubtedly licked his plate clean had we not been dining in public, a true testament to the dish’s irresistible flavor.
Of course, no Italian meal is complete without dessert. We indulged in a deconstructed Cassata cake, bursting with wild berries and a Campari sauce, alongside a classic, velvety Tiramisu. Every single course was outstanding, from the innovative starters to the perfectly executed mains and the delightful sweet endings. The dining experience was truly worth every penny of its higher-than-average price tag. I wholeheartedly recommend Osteria Enoteca Ai Artisti to anyone visiting Venice; it’s an absolute culinary imperative.

Croque Madame: The Quintessential French Comfort Food
Now, let’s talk about the star of today’s post: the magnificent Croque Madame. This “bad boy” was precisely what was needed to take the edge off those post-holiday blues. What better way to find comfort than with a warm, utterly satisfying sandwich? Imagine a delicious ham and mustard sandwich, generously topped with a rich, cheesy sauce, then grilled to golden perfection, and finally crowned with a flawless poached egg. Oh yes, this is the ultimate breakfast or brunch indulgence, and let’s be honest, anything featuring a decadent cheese sauce is bound to be good.
The Origins and Evolution of a French Classic
The Croque Madame is a celebrated French dish, deeply rooted in Parisian café culture. It’s a delightful variation of the Croque Monsieur, which first appeared on Parisian cafe menus in the early 20th century. The “Monsieur” traditionally consists of baked or pan-fried ham and cheese (often Gruyère or Emmental) sandwiches, lavishly coated in a creamy béchamel sauce. The “Madame” version elevates this classic by adding a perfectly fried or poached egg on top, its runny yolk cascading down the rich cheese sauce and savory ham, creating an irresistible fusion of flavors and textures that is both comforting and gourmet.
While the traditional recipe often calls for Gruyère cheese, I’ve crafted my own delightful version using strong cheddar. It’s not only just as delicious but also a more budget-friendly option, especially here in Italy where Gruyère can be pricier. My personal touch also involves topping it with a delicately poached egg, which I believe is the absolute best way to enjoy eggs. The creamy yolk adds an extra layer of richness and a visually stunning finish to this already impressive dish, making each bite truly heavenly.
Mastering the Perfect Poached Egg for Your Croque Madame
The beauty of the Croque Madame lies in its simplicity and speed of preparation. Honestly, the entire dish takes around 15 minutes from start to finish, and if you’ve already mastered the art of poaching eggs, it might even be quicker! Achieving that perfect poached egg – with its firm white and runny, golden yolk – can seem daunting at first, but with a few practices – and perhaps a couple of oddly shaped eggs along the way – it becomes incredibly easy, yielding perfect results almost every time.
Here are my top tips for consistently perfect poached eggs:
- Start with Room Temperature Eggs: Always use eggs that have been brought to room temperature, not straight from the fridge. This helps them cook more evenly and prevents the whites from spreading too much.
- The Gentle Slide: Crack each egg into a small ramekin or a small bowl. This allows you to slowly and carefully slide the egg into the simmering water, maintaining its shape.
- Perfect Water Temperature: Bring a large pot of salted water to a rolling boil, then immediately reduce the heat to the absolute lowest setting. You want the water to be barely simmering, with tiny bubbles, but no aggressive boiling. If it’s still bubbling vigorously on the lowest setting, turn off the heat for a minute or two before adding the eggs.
- A Dash of Vinegar: Adding a splash of white vinegar (about a tablespoon per liter of water) is a secret weapon. It helps the egg whites coagulate faster, keeping the egg compact and preventing wispy edges. Don’t worry, you won’t taste it!
- Don’t Overcrowd the Pot: Poach eggs one or two at a time, depending on the size of your pot. Overcrowding can significantly drop the water temperature and cause the eggs to stick together.
- Mind the Cooking Time: For a deliciously runny yolk, poach your eggs for approximately 2 to 3 minutes. If you prefer a slightly firmer yolk, extend the cooking time to 4 to 5 minutes. Adjust according to your personal preference.
- Drain Thoroughly: Use a slotted spoon to carefully lift the poached eggs from the water. Gently dab them on a piece of kitchen paper or a clean tea towel to absorb any excess moisture before placing them on your Croque Madame. This prevents a watery sandwich.

Croque Madame – a luxurious and comforting French open-faced sandwich, featuring classic mustard and ham toasts, generously blanketed in a rich, cheesy béchamel sauce, and crowned with a perfectly cooked poached egg. It’s an unforgettable breakfast or brunch experience that’s surprisingly easy to make.
Ingredients
- 8 slices small white bread (such as brioche, sourdough, or good quality sandwich bread)
- 4 slices good quality ham (e.g., thinly sliced Black Forest ham, cured ham, or traditional French Jambon de Paris)
- ~1/2 cup (50g) strong cheddar cheese, grated (for a sharper flavor; or Gruyère for a classic, nutty taste)
- 1 knob of unsalted butter (approximately 1 tablespoon), for the béchamel sauce
- 1 tablespoon all-purpose flour (for the roux)
- ~1/2 cup (3.3 fl oz / 100ml) semi-skimmed milk (use whole milk for an even richer sauce)
- 1 tablespoon Dijon mustard (provides a subtle tang that complements the ham and cheese)
- 4 large eggs, ideally at room temperature, for poaching
- A pinch of freshly grated nutmeg (a key flavor in authentic béchamel)
- Salt and freshly ground black pepper, to taste
- Optional: A splash of white vinegar for poaching eggs (helps the whites set quickly)
Instructions
- Preheat Grill & Prepare Sandwiches: Preheat your grill (broiler) to 180°C (350°F / Gas Mark 4). Take each slice of bread and spread one side generously with Dijon mustard. Lay four of these slices, mustard-side up, on a baking tray. Place a slice of good quality ham on top of each, then cover with the remaining four bread slices, mustard-side down, to form four ham and mustard sandwiches.
- Make the Cheesy Béchamel Sauce: In a medium saucepan, melt the knob of butter over a medium-low heat. Once the butter has completely melted, add the flour and whisk constantly for about 1 minute until it forms a thick, smooth paste (a roux). This ensures a lump-free sauce. Gradually, pour in the milk, whisking vigorously the entire time to prevent any lumps from forming. Continue to cook, stirring occasionally, until the sauce begins to thicken to a creamy consistency. Stir in the pinch of freshly grated nutmeg and season generously with salt and freshly ground black pepper. Remove the saucepan from the heat, add the grated cheddar cheese, and stir until the cheese has fully melted and the sauce is wonderfully smooth, thick, and glossy.
- Grill the Croque Madame Base: Spoon the warm, cheesy béchamel sauce generously over the top of each ham sandwich on the baking tray, ensuring the entire surface of the top bread slice is covered. Place the baking tray under the preheated grill and cook for 3 to 5 minutes. Watch carefully until the cheese sauce is beautifully bubbling, golden brown, and slightly caramelized. Remove from the grill.
- Poach the Eggs: In a separate large pot, bring a good amount of salted water to a gentle boil. Reduce the heat to the lowest possible setting; the water should be barely simmering, with no rapid bubbles. If desired, add a splash of white vinegar to the water. Carefully crack each of the four room-temperature eggs into individual ramekins or small bowls. One by one, slowly and gently slide each egg into the simmering water. Poach for approximately 2 to 5 minutes, depending on how runny you prefer your egg yolk (2-3 minutes for very runny, 4-5 minutes for medium runny).
- Assemble and Serve: Using a slotted spoon, carefully remove the poached eggs from the water. Gently dab each egg on a piece of kitchen paper to remove any excess water. Place one perfectly poached egg on top of each warm, golden Croque Madame sandwich. Season the poached eggs with a final sprinkle of salt and freshly ground black pepper. Serve immediately and enjoy this truly indulgent and comforting French classic!
Notes for the Perfect Croque Madame:
Please note that all imperial measurements provided are approximate and can be adjusted to your taste or kitchen setup. For the most authentic and flavorful experience, prioritize good quality ingredients: invest in excellent bread, savory ham, and your preferred cheese. Freshly grated nutmeg is highly recommended for adding depth to your béchamel sauce. Feel free to experiment with different cheeses like Emmental or Comté for subtle variations in flavor.
