- 1 large onion, finely chopped
- 1/4 cup (60ml) dry white wine (e.g., Gavi, Pecorino, Pinot Grigio)
- 1.5 cups Arborio rice (300g) or Carnaroli rice
- 3 large garlic cloves, unpeeled
- 1 heaped tablespoon mascarpone cheese
- 2 oz (50g) Taleggio cheese, plus 4 additional slices for serving
- 8 fresh sage leaves
- 5 cups low-sodium chicken stock (1.25 Litres), warmed
- Extra virgin olive oil
- Salt and freshly ground black pepper, to taste

- Remove the seeds and stringy bits from the middle of the pumpkin. Cut it into quarters, then carefully cut off the skin.
- Cut the pumpkin into medium-sized cubes (approx. 1 inch) and add them to a large baking tray along with the 3 unpeeled garlic cloves.
- Drizzle the pumpkin and garlic with a generous amount of olive oil, then season with salt and pepper. Roast in the oven for 40-45 minutes, or until the pumpkin is cooked through and slightly caramelized, and the garlic is very soft.
- Transfer the cooked pumpkin to a blender. Squeeze the softened garlic flesh from its skins into the blender. Add the mascarpone and 1 ladleful of warm stock (about ½ cup/120 ml). Blend until a smooth, velvety puree is formed. Set aside.
To Make the Risotto:
